LEMON MERINGUE PIE

Ingredients

  • For the Crust
  • 1 cup plus 2 tbsp. flour, plus more for dusting
  • 1 tbsp. granulated sugar
  • 1⁄2 tsp. kosher salt
  • 6 tbsp. unsalted butter, cubed and chilled
  • 3 tbsp. ice-cold water
  • For the Filling and Meringue
  • 1⁄2 cup granulated sugar
  • 1⁄4 cup cornstarch
  • 1⁄8 tsp. salt
  • 4 eggs, separated, plus 8 egg whites
  • 3 tbsp. butter, cubed
  • Zest and juice of 2 lemons
  • 1⁄4 tsp. cream of tartar
  • 3⁄4 cup superfine sugar
