Lemon Pepper Chicken With Lemon Rice And Raita

Ingredients

  • 4 tbsp very finely diced cucumber
  • 2 tbsp very finely diced carrot
  • 1/2 red onion, finely diced
  • juice of 1/2 lemon
  • 1 tbsp caster sugar
  • 4 tbsp natural yoghurt
  • 1 tbsp finely chopped coriander
  • salt
  • 1 1/2 cups basmati rice, rinsed
  • 4 sprigs curry leaves
  • 1 large lemon, zested and juiced
  • 3 tsp cumin seeds
  • 3 tsp mustard seeds
  • 1 small red onion, finely sliced
  • 4 tbsp sunflower oil
  • 2 green chillies, deseeded, chopped coarsely
  • 2 tsp ground tumeric
  • 1/2 tsp asafoetida powder
  • 6cm piece ginger, peeled, finely grated
  • 3 tsp caster sugar
  • salt, to taste
  • 1 1/2 tbsp finely chopped coriander leaves, to serve
  • 2 spatchcocks
  • 3 tbsp sunflower oil
  • 1 tbsp cumin seeds
  • 1 tbsp mustard seeds
  • 1 tsp fenugreek seeds
  • 12 curry leaves
  • 1 red onion
  • 4 cloves garlic, finely diced
  • 6cm piece ginger, finely grated
  • 4 tbsp black peppercorns, crushed
  • 2 tsp ground coriander
  • zest of 2 lemons
  • juice of 1 lemon
  • 1 tbsp dark brown sugar
  • 4 tbsp chopped coriander leaves
  • banana leaf, to serve
