Looking for something light and healthy? This salad was full of flavor and health! The recipe is from this blog via Pinterest (via Emily's pin :-)). We loved it and it made a large bowl that will last us some lunches, too. It has a bunch (literally, an entire bunch) of cilantro, so if you're not a fan of the herb, it's not for you. My only change to the recipe was upping the garlic, of course. Enjoy!
