Ingredients

  • 1 3/4 c. Flour
  • 3/4 c. Sugar
  • 2 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 3/4 c. Ricotta cheese
  • 1/2 c. Water
  • 1/4 c. Olive oil
  • 1 tbs. lemon zest
  • 2 tbs. lemon juice
  • 1 flax egg

Directions

  1. Preheat oven to 375 degrees. Combine flour through salt. Stir and make a well I the center. Combine ricotta through flax egg in separate bowl. Add wet to dry. Stir just until moist. Coat tin with cooking spray. Bake for 16 minutes. Let cool.
