Mix with fingertips till looks like breadcrumbs add 1/2 whisked egg
Mix lightly. .wrap in cling film..chill in d fridge for half an hour.
Roll and line d pastry tin and blind bake for 20 mnts on 180ºc
Blind bake...cover rolled pastry with parchment paper..pour dry beans and bake..
Remove the beans..brush little bit egg on pastry and again bake for another 3-5 mnts..
For filling. ..
Whisk 3 eggs with 125 gms powdered sugar...add zest of 1 lemon and juice of 3 lemon.s and 1 orange. .whisk..add 150 ml fresh cream and stir..pour into pastry tin ..bake for 25-30 mnts on 180ºc..remove from tin..cool..sprinkle icing sugar...
