Lemon Tea Cake

Ingredients

• 1 1/2 c plain flour
• 1 c sugar
• 1 1/2t baking powder
• Pinch of salt
• 125 g butter
• 2 large eggs, lightly beaten
• 1/2 c milk
• Grated rind of 1 lemon
• 1/2 c chopped pecans
• Juice of 1 lemon
• 1/4 c sugar

Directions

Grease and line a ring tin.
In a kitchen wizz add flour, sugar, baking powder and salt. Mix.
Add eggs and milk, lightly mix.
Add zest and pecans, lightly mix.
Pour into tin and bake in a moderate oven until firm to touch.

Mix lemon juice and sugar and pour over cooked cake.
Cool in tin.
