Lemon Tea Cake
Ingredients
- 1 1/2 c plain flour
- 1 c sugar
- 1 1/2t baking powder
- Pinch of salt
- 125 g butter
- 2 large eggs, lightly beaten
- 1/2 c milk
- Grated rind of 1 lemon
- 1/2 c chopped pecans
- Juice of 1 lemon
- 1/4 c sugar

Directions
- Grease and line a ring tin.
- In a kitchen wizz add flour, sugar, baking powder and salt. Mix.
- Add eggs and milk, lightly mix.
- Add zest and pecans, lightly mix.
- Pour into tin and bake in a moderate oven until firm to touch.
- Mix lemon juice and sugar and pour over cooked cake.
- Cool in tin.
