Lemon Tea Cake

Ingredients

  • 1 1/2 c plain flour
  • 1 c sugar
  • 1 1/2t baking powder
  • Pinch of salt
  • 125 g butter
  • 2 large eggs, lightly beaten
  • 1/2 c milk
  • Grated rind of 1 lemon
  • 1/2 c chopped pecans
  • Juice of 1 lemon
  • 1/4 c sugar

Directions

  1. Grease and line a ring tin.
  2. In a kitchen wizz add flour, sugar, baking powder and salt. Mix.
  3. Add eggs and milk, lightly mix.
  4. Add zest and pecans, lightly mix.
  5. Pour into tin and bake in a moderate oven until firm to touch.
  6. Mix lemon juice and sugar and pour over cooked cake.
  7. Cool in tin.
