Lime and Chorizo Chicken Salad

Ingredients

  • 2 chicken breats (Skin On)
  • Drizzle of olive oil
  • salt and black pepper
  • 30g honey
  • 3 limes
  • 20ml soy sauce
  • 8 small cooking chorizo
  • 4 baby gem lettuces, cut in quarters lengthways
  • 8 radishes, thinly sliced
  • 50g toasted cashews, roughly chopped

Directions

Preheat the oven to 200°C (fan 180°C/gas mark 6).

Tumble the chickeninto a roasting tray,
Drizzle over a little oil and sprinkle with salt and pepper.
Slide straight into the hot oven and cook for 15 minutes.
Meanwhile, mix together the honey, juice of three limes and the zest of one and the soy sauce in a bowl.
After 15 minutes, take the roasting tray out of the oven and add the chorizo.
Pour over the lime dressing and toss the whole lot together.
Put the tray back into the oven and cook for a further 15 minutes.
After 15 minutes, everything should be nicely cooked through.
Serve up the baby gem lettuce, top with the chicken and chorizo and spoon over some of the cooking juices.
Finish with the sliced radish and cashews.
