Lime and Ginger Smoothie

Ingredients

  • Juice of 3 limes
  • 2 Tbs. water
  • 1 Tbs. honey
  • 1 cucumber, chopped
  • 1 green apple, cored and chopped
  • 2 kale leaves, stemmed and coarsely chopped
  • 2 Tbs. peeled and chopped fresh ginger
  • 2 cups (8 oz./250 g) ice cubes

Directions

  1. In a Vitamix blender, combine the lime juice, water, honey, cucumber, apple, kale, ginger and ice cubes. Puree, slowly increasing the blender speed to high, until smooth, 1 to 2 minutes. Divide between 2 glasses and serve immediately. Serves 2
