Lime Chicken Tacos
Ingredients
- 2 large chicken breasts
- 2 tablespoons butter
- 2-3 green onions OR approx 1/2 cup chopped onion
- 2 cloves of garlic minced (I buy the pre-minced stuff from the store and do a heaping scoop)
- 1/8 cup red wine vinegar
- 1/2 lime juiced (I just pour a bunch from a bottle. Probably between 1/8-1/4 cup).
- 1 teaspoon sugar
- 1/2 teaspoon salt
- Black pepper to taste
- 1 tablespoon cumin
- 1-2 tablespoons dry cilantro or fresh to taste
Directions
Boil your chicken until it is soft enough to shred. Save about 3/4 cup of the water and add it back into the shredded chicken. (I use plain water when I forget to save it-this just keeps the chicken from getting dry). Set aside
In a pot melt two tablespoons of butter.
Sauté onions until soft.
Add garlic and cook a couple more minutes.
Add in all remaining ingredients.
Thrown chicken into ingredients and mix well.
