Lobster Bisque Pasta

Ingredients

  • 5 tablespoons extra-virgin olive oil
  • 1 medium brown onion, diced
  • 1 large celery rib, chopped
  • 1 large carrot, chopped
  • 1 punnet cherry tomato’s, chopped
  • 7 cloves garlic, minced
  • 2 sprigs fresh tarragon
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 3 hot chilli’s
  • ¼ teaspoon whole black peppercorns
  • 1 cup brandy or sherry or white wine
  • 4 cups fish or vegetable stock
  • 3 Maine lobster tails, uncooked (or ¾ pound cooked lobster meat)
  • 1 tub tomato paste
  • Half a cup cream
  • Kosher salt as needed
  • Freshly ground black pepper, as needed
  • 1 cup unsalted butter, cut into ½-inch cubes
  • 1 bunch of parsley
  • 1 pound bucatini pasta, I like Setaro brand
  • 600 grams pasta
  • Serves six people
