Ingredients

  • 14 oz peeled carrots
  • 2 c sugar 1 1/2 c vegetable oil
  • 4 large eggs 1 tsp vanilla 2 c flour 2 tsp baking soda 2 tsp cinnamon 1/2 c well drained pineapple
  • 1/4c minced walnuts Frosting 8oz cream cheese softened 1 1/2c butter softened 1 box confectionary sugar 1 tsp. vanilla

Directions

  1. Preheat oven 350. butter a 10” spring form pan *
  2. Shred the carrots (3. cups) Mix with sugar oil and vanilla Add eggs until light and fluffy Add grated carrots
  3. Mix flour, soda, and cinnamon. Mix 1 minute Fold in pineapple and nuts
  4. Pour batter in pan
  5. Bake 65-70 minutes until toothpick is clean Cool completely.
  6. Frosting
  7. Beat cream cheese and butter until smooth add sugar and vanilla Mix well and frost
  8. *BE SURE TO USE SPRING FORM PAN
