Sweat onions in oil with three pinches salt, add beef and cook, add dry seasonings, then fresh ingredients, bring to a simmer, turn to low heat and cook for an hour.
Cook macaroni half way, drain and add to tomatoes and any additional seasoning.
Let cool, let pasta absorb juices, transfer to baking dish, cover with foil.
Bake on 400* for 45 mins, uncover, add cheese on top and broil until melted.
