Make Ahead Omelet Muffins

Ingredients

  • Cooking spray
  • 6 eggs
  • 6 egg whites
  • 1/4t salt
  • Black pepper
  • 3oz ham
  • 2oz reduced fat Swiss cheese, chopped
  • 1/2c chopped red pepper
  • 1/4c chopped scallion

Directions

  1. Preheat oven to 350 degrees. Lightly spray a standard 12 cup non-stick muffin tin.
  2. In a medium bowl beat the whole eggs and egg whites with a fork. Season them with the salt and pepper. Mix in the ham, cheese, peppers, and scallions. Pour about 1/4c of mixture into each muffin cup and carefully place pan in the oven.
  3. Bake until eggs are set, 20-24 minutes
  4. To freeze wrap cooled muffins in plastic wrap. To reheat unwrap frozen muffin and microwave about 1 minute, or bake at 350 until hot through, about 25 minutes.
