Manhattan Fish Chowder With Roasted Fingerling Potatoes And Bacon Relish

Ingredients

  • 1 tablespoon canola oil
  • 1/4 pound slab bacon, finely diced
  • 1 small Spanish onion, finely diced
  • 1 small stalk celery, finely diced
  • 1 small carrot, finely diced
  • 3 cloves garlic, chopped
  • 1 cup dry white wine, such as Sauvignon Blanc
  • 4 cups fish stock
  • 1 cup pureed canned plum tomatoes
  • Roasted Fingerling Potatoes:
  • 6 fingerling potatoes, halved lengthwise
  • Canola oil
  • Salt and freshly ground black pepper
  • Pan Roasted Halibut:
  • Canola oil
  • 1 (1 1/2 pound piece) halibut fillet
  • Salt and freshly ground black pepper
  • Bacon Relish:
  • 2 teaspoons canola oil
  • 3 cloves garlic, finely chopped
  • 1/8 teaspoon red chile flakes
  • 1/4 cup finely chopped fresh flat leaf parsley
