Mary’s Chili

Ingredients

  • 2 lbs. ground beef
  • salt & pepper to taste
  • 3 tbs. pickled jalapeños peppers
  • 1/2 large yellow onion diced
  • 2-1/2 cloves garlic minced
  • 1 chipotle pepper in adobo sauce seeded and finely chopped
  • 1 can fire-roasted tomatoes
  • 1 (6 oz. can) tomato paste
  • 2 cups beef stock or broth
  • 1 bay leaf
  • Seasoning Mix
  • 1 tablespoon chili powder
  • 1 tablespoon smoked paprika
  • 1/2 tablespoon ground cumin
  • 1/2 tablespoon dried oregano
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon unsweetened cocoa powder
  • 1/4 teaspoon ground cinnamon

Directions

  1. Season the beef with kosher salt and black pepper.
  2. In a large pot, brown beef adding the onions and garlic near the end. Drain grease. Add remaining ingredients, including seasoning mix.
  3. Bring the chili to a boil and then turn the heat down to low.
  4. Simmer, uncovered, up to 3 hours stirring occasionally so it doesn’t stick. If it becomes too thick, add more stock as needed.
  5. Before serving remove the bay leaves and serve plain or covered with sour cream, shredded cheese, or green onions.
