Massaman Curry Slow Cooker
Ingredients
- 600-800g gravy beef cut into large cubes
- 1/4 c plain flour
- 400mL coconut milk
- Tin Massaman curry paste
- 1t tumeric
- 1t cinnamon
- 1 star annisse
- 1T tamarind paste or slices of fresh lemon peel
- 2t fish sauce
- 2 kaffir lime leaves
- 1 red chilli, chopped
- Garlic + ginger
- Large carrot cut into rounds
- 400g potatoes cut about same size as meat
- 1 large onion slice thinly
- Stalks of some corriander. Save tops for garnish.
- Roasted, salted peanuts for garnish.
Directions
Heat slow cooker on high.
Add onion, potato and carrot.
Coat meat in seasoned flour and add to pot.
Mix together other ingredients and add to cooker.
Cook an hour on high and 6-7h on low.
