Mediterranean Baked Salmon With Quinoa Tabouli

Ingredients

  • 4 salmon fillets (150g each)
  • Juice of 1 lemon
  • 2 tablespoon olive oil
  • 1 tsp dried oregano
  • 1 cup, quinoa, cooked
  • 1 cucumber, diced
  • 200g cherry tomatoes, halved
  • 1/4 cup chopped parsley
  • 1/4 cup crumbled feta
  • Salt and pepper

Directions

  1. Preheat oven to 180C.
  2. Season salmon with lemon, oil, oregano, salt & pepper.
  3. Bake for 15 mins.
  4. Mix quinoa, cucumber, tomatoes, parsley and feta.
  5. Serve salmon on top of the tabouli.
