MEXICAN Chicken And Rice

Ingredients

  • 1 tray tenderloins, diced
  • 1 pkt taco dry mix (mild or fiery)
  • 2 X pkts Mexican rice, microable
  • I tin beans, kidney/black
  • 250g frozen mixed veges
  • 180g grated cheese (1 2/3c)

Directions

  1. Set oven to 180°
  2. Spread the Mexican rice over the base of a dish.
  3. Add 1c water.
  4. Mix chicken and taco seasoning and place on top of rice.
  5. Cover with foil and cook for 15 min.
  6. Remove foil, add veges, beans and mix through.
  7. Top with cheese and cook for 15-20min.
