Ingredients

  • 8 large ears of corn
  • 1/2 cup mayonnaise
  • 3T fresh lime juice
  • 1 1/2 teaspoon chili powder
  • 1tsp smoked paprika
  • OR instead of smoked paprika:
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/4 cup crumbled Feta cheese
  • 1/4 cup minced fresh cilantro

Directions

  1. Heat a grill to medium-high heat. Remove the husks and the threads from the corn. Transfer the corn to the grill and cook until charred and heated through, about 20 minutes.
  2. OR
  3. Bring large pot of salted water to boil, cook cons for 3 min and drain. Heat on med high for 6/8 min.
  4. Brush each corn cob with mayonnaise mixed with spices then sprinkle evenly with crumbled cheese, and sprinkle with the cilantro. .
