These INCREDIBLE (and garlicky!) little bites are called Mici (prononounced Meech) or Mititei (me-tee-tay) and a recent discovery from my trip to Romania. I’ve been dreaming about them since i left. I know a ton of countries have variations of this, so let me know if you’ve had a different way!

These have a couple secret ingredients: baking soda and bone broth which I’ve never used in a grilling recipe. This adds a ton of moistness and a “springy/bouncy” like texture.

I made these with a combination of lamb and ground beef, and while you can go with a leaner cut, the fattier the beef, the more flavor.
Here is how I made them:

1.Add 1.25lb 80/20 ground beef and 0.75lb ground lamb to a bowl.

2.To the meat mixture add a generous amount of sea salt, fresh cracked ground pepper, 2 tablespoons crushed dried thyme, 2 teaspoon baking soda, and 5-7 freshly minced garlic cloves.

3.Give everything a good mix (get those hands in there) while adding 6 oz of bone broth and mix well until all the seasoning and liquid has been well incorporated.

4.Cover the mixture, let it sit for 4 hours to overnight in the fridge.

5.When ready to make it, you would traditionally grill these (charcoal/wood/bbq), but you can also use an indoor grill or as a last resort, a cast iron pan.

6.Cook these until the meat has been cooked through, you want the grill marks with a nice crust on all sides. This will require you to use a tong to flip them over and cook on all sides.

7.When ready to serve, these are traditionally eaten with mustard and bread, but use your imagination and serve it up however way you want. They are so good, you will probably eat a few straight up without anything!!

These are also amazing candidates for meal prep. Feel free to double the batch as they reheat well. Again, feel free to adjust the ground meat to 85/15 or 90/10 if you personally prefer to keep things leaner, but if using the grill, it does drip away quite a bit.
