Directions

  1. Cut bacon in half inch slices to add to sofrito
  2. Coat bottom of pot with olive oil
  3. Add bacon to crispy but not too crispy
  4. Add 6 shakes of cumin
  5. Palm full/tablespoon of garlic purée
  6. Take off heat n stir
  7. Add 2 tablespoons tomato paste
  8. Stir still off heat
  9. Add sofrito (whole container)
  10. Heat n stir to bubbles
  11. Add rice n stir to bubbles
  12. Add bay leaves
  13. Add 1 tsps lime juice
  14. Add bean liquid and water mix (Drain beans save liquid
  15. Add beans to pot
  16. Add chick stock to empty cans and swirl around then add to bean liquid
  17. Add rest of chicken stock)
  18. Stir every so often to boil
  19. Add 2 tbsp olive oil
  20. Cover with parchment paper then lid and put in oven at 350
