#Mortadella And Pistachio Pasta #

Ingredients

  • 200 g fusilli pasta
  • 2.5 liters water
  • 8 g per liter salt
  • 1/4 cup olive oil
  • 120 g mortadella cut to 1/8 in x 1” strips
  • 40 g unsalted pistachios chopped
  • 1 shallot diced
  • 1 garlic clove thinly sliced
  • 2 Tbsp grated parmigiana or pecorino cheese
  • 1 Tbsp butter

Directions

  1. Bring water to boil. Add salt and pasta.
  2. Heat oil in pan on medium and fry mortadella till it starts to crisp. Remove and set aside
  3. Add shallots, garlic and pistachios and cook 1-2 minutes.
  4. Add some pasta water to prevent burning and continue to simmer
  5. Add the mortadella back
  6. Add 1/2 cup or more pasta water and the almost done pasta (maybe a minute or 2 before done). Cook and stir till pasta is done and a sauce is created, tossing all the while
  7. Turn off heat. Add the cheese and toss till incorporated. Add more pasta water if needed.
  8. Add 1 Tbsp butter and toss till melted
  9. Garnish with basil or parsley
