Mushroom Brown Rice

Ingredients

  • 1 tablespoon olive oil
  • 1/2 small onion, finely chopped
  • 1/2 pound baby Bella, ceremonies, or button mushrooms stems trimmed and thinly sliced
  • 1/4 teaspoon salt, more to taste
  • Pepper
  • 2 cups hot cooked brown rice

Directions

  1. In a large skillet, heat the oil over medium heat. Add the onion and cook, stirring occasionally, until it begins to soften, about 3 minutes. Add the mushrooms and cook without stirring for 5 minutes, or until wilted and brown. Season with salt and pepper to taste.
  2. Fold the cooked rice into the mushrooms. Adjust the seasonings and serve.
