First season your chicken breasts with Nando's rub
Air fry at 180 for about 20-25 mins - until it’s pretty much cooked through
For the sauce, fry off one diced onion, 50g chopped sundried tomatoes and 2 cloves diced garlic
Then add in about 2 tbsp tomato puree and some Nando's rub and cook until the puree darkens in colour
Add in some chicken stock and simmer (I used about 300ml, how much you use will depend on how thick/runny you want your sauce. 300-500ml is good!)
Finally, add in the juice of half a lemon, some Nando's sauce of choice for an extra kick, 50g light Philadelphia and 20g grated Parmesan, then mix
Add in some spinach and your chicken from earlier and simmer until the spinach has wilted and the sauce thickened slightly. You can also add cornflour here if you want to thicken your sauce more!
