1. Chop cauliflower into small florets. Place in a microwave safe container and cover, leaving a small gap for air and microwave for 10 minutes or until tender.
2. Place cauliflower in mixing bowl and mash until fine. Add flour, eggs, parsley, salt and pepper, stir until combined.
3. Heat oil in a non-stick frying pan. Using a tablespoon scoop the batter into the pan forming small patties. Fry on each side until golden.
