New Orleans Black Beans N Brown Rice

Ingredients

  • 1 cup black beans, cooked
  • 2 cups brown rice
  • 4 cups water
  • 2 tbsp Olive oil
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 onion, diced
  • 1 tomato, diced or 2 cups canned diced tomatoes
  • 2 tbsp minced garlic
  • 2 bay leaves
  • 1/4 tsp cayenne
  • 1/2 tsp cumin
  • 1/2 tsp basil
  • 1/2 tsp ground pepper
  • 1 tsp sugar
  • Salt to taste

Directions

  1. Cook black beans or use canned black beans
  2. In another pot, cook brown rice.
  3. Dice vegetables
  4. Place oil in a large frypan. Fry vegetables and spices.
  5. When beans and rice are tender, add cooked vegetables and spices.
