New Orleans Black Beans N Brown Rice
Ingredients
- 1 cup black beans, cooked
- 2 cups brown rice
- 4 cups water
- 2 tbsp Olive oil
- 1 red pepper, diced
- 1 green pepper, diced
- 1 onion, diced
- 1 tomato, diced or 2 cups canned diced tomatoes
- 2 tbsp minced garlic
- 2 bay leaves
- 1/4 tsp cayenne
- 1/2 tsp cumin
- 1/2 tsp basil
- 1/2 tsp ground pepper
- 1 tsp sugar
- Salt to taste
Directions
Cook black beans or use canned black beans
In another pot, cook brown rice.
Dice vegetables
Place oil in a large frypan. Fry vegetables and spices.
When beans and rice are tender, add cooked vegetables and spices.
