No Bake Chocolate Bon Bons

Ingredients

  • 2 cups vegan dark chocolate chips
  • ½ cup raisins
  • ¼ cup chopped pecans, optionally toasted
  • ¾ cup unsweetened coconut flakes, optionally toasted
  • ¼ cup almond or peanut butter
  • 2 tablespoons maple syrup or desired sweetener to taste
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon ground cinnamon
  • 1/8 tsp ground cardamom powder

Directions

  1. Place chocolate chips in a double boiler on medium high heat until the chips are melted.
  2. Place in a large bowl.
  3. Set aside 1/2 cup of the toasted coconut to sprinkle on top of the cookies.
  4. Add remaining ingredients to the melted chocolate and mix well.
  5. Shape cookies and place on a parchment paper lined or well oiled baking sheet.
  6. Top with remaining ¼ cup coconut flakes.
  7. Refrigerate until cool.
