No-Cook Chocolate & Oat Bars

Ingredients

  • 2 tsp vanilla extract
  • 1/2 cup cocoa powder
  • 1/2 cup natural peanut butter
  • 1/4 cup pumpkin seeds
  • 2 cups rolled oats
  • 2/3 cup honey
  • 1/4 cup chia seeds
  • 1 1/3 cup grated coconut
  • 1/4 cup sunflower seeds

Directions

  1. Line one or more 20cm (8 inch) square baking pans with parchment paper, according to number of people you want to serve
  2. In a large bowl, mix all the ingredients together
  3. Place the mixture into a prepared baking pan. Press the mixture so it is compact. Place it in the fridge for at least 30 mins so the mixture can solidify. Cut each square into 12 bars, then serve
