***Oat Carrot Apple Muffins Super Healthy

Ingredients

  • 200 g (2 cups) rolled oats (used same amount after blending)
  • 1 tsp baking powder
  • pinch of salt
  • 1 tsp cinnamon
  • 240 ml (1 cup) oat milk
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 tbsp sweetener (stevia or your choice) (try 2tbsp maple syrup)
  • 1 cup shredded carrot
  • 1 cup shredded apple
  • 4-5 dates Medjool (if desired)
  • 1 tablespoon raisins (if desired)
  • chopped nuts optional for topping

Directions

  1. Heat oven at 360°F
  2. Blend eggs well and set aside
  3. Blend oat flour, baking powder, salt, cinnamon
  4. Add milk, vanilla
  5. Add shredders carrots, apples, dates
  6. Add well blended eggs
  7. Mix all by hand
  8. Makes max 15 silicone mini cups
  9. Cook for 25 min
