1Combine the orange zest, orange juice, and olive oil in a medium baking dish. Add the chicken tenders and marinate for at least 15 minutes and up to 2 hours. Cover and refrigerate if marinating for longer than 1 hour.
2Preheat the oven to 350°F. Cover the baking dish with aluminum foil and bake for 35 to 40 minutes, or until the chicken is no longer pink when you cut into the fattest tender.
3Discard the cooking liquid. Cool the chicken and shred or cut into chunks.
