One Pan Protein Pancakes

Ingredients

  • 1 1/2 cups cottage cheese
  • 1 cup oats
  • 4 eggs
  • 1/2 cup milk of choice
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 Tbs maple syrup or honey
  • Dash of salt
  • 1/2 cup blueberries or topping of choice

Directions

  1. Preheat oven to 375 and line a 9x13 pan with parchment paper.
  2. Blend all ingredients in blender until smooth.
  3. Pour into pan & spread out evenly. Top with toppings of choice.
  4. Bake about 25 minutes, until set & golden.
