One Pot Cajun Pasta

Ingredients

  • 1 lb. chicken, cubed
  • 1/2 tsp. salt
  • pepper, to taste
  • 14 oz. smoked sausage, sliced
  • 4 cloves garlic, minced
  • 1 quart low-sodium chicken broth
  • 2-1/2 cups heavy whipping cream
  • 1 lb. dried pasta of your choice
  • 1-1/2 Tbs. Cajun seasoning
  • 14.5 oz. can diced fire-roasted tomatoes
  • 4 oz. parmesan cheese
  • 2-4 cups fresh spinach, chopped with stems removed
  • Olive oil

Directions

  1. In a large covered saucepan, heat approximately 4 Tbs. olive oil over medium-high heat. Add chicken, season with salt and pepper and cook until browned. Add sausage and garlic, cooking two minutes more.
  2. Add chicken broth, cream, pasta, Cajun seasoning and tomatoes. Stir to combine. Bring to a simmer. Reduce heat to low and cover. Cook for 15-20 minutes, or until pasta is tender.
  3. Remove from heat and stir in parmesan cheese and spinach. Serve and enjoy!
