Onion Bhaji

Ingredients

  • 500 gram onion, (50/50 yellow/red), cut into half moon chaped pieces
  • 3 deciliter Besan flour (Gram flour)
  • A thumb sized grated piece of fresh ginger
  • 1 tsp turmeric
  • 1/2 tsp chili powder
  • 1/2 tsp lemon grass powder
  • 1 tsp koriander powder
  • 1/2 tsp baking powder
  • A handful of chopped parsly or fresh coriander
  • 1/2 deciliter of cold water (add more water if needed)
  • Oil for frying.

Directions

  1. Peel and cut the onions
  2. Chrush the onions hard in a bowl with you hand and fingers together with some corse salt.
  3. Fill the bowl with water and rinse the salt out. Do it a couple of times.

The dough:

  1. Mix the Besan flour with the water.
  2. Add the spices, herbs and the baking powder and mix again.
  3. Mix in the squezed onion pieces
  4. You can now choose to deep fry or pan fry the Onoin Bhaji.
  5. If you deep fry them, then only do 3 at the time.
  6. Decorate with some parsley or coriander leaves.
  7. Serve hot togethet with apple chutney, tomato chutney and some plain yoghurt.
