Open Lamb Kofta With Cucumber Mint And Coriander Salad

Ingredients

  • 1 onion
  • 1 fresh long red chilli
  • 1 clove garlic
  • Olive oil
  • 2 tbspn tomato paste
  • 1tspn cumin
  • 1 tspn sweet paprika
  • 1 tspn allspice
  • 500 g mince lamb
  • 2 tbspn chopped parsley
  • 35 g dried breadcrumbs
  • Zest 2 lemons
  • 1 tbspn whole grain mustard
  • 4x 17-20 cm pita bread rounds
  • Natural Greek yoghurt to serve
  • Salad
  • Handful flat parsley
  • 1/2 Lebanese cucumber thinly sliced
  • Handful coriander
  • Handful mint
  • Small red onion thinly sliced
  • Juice half lemon
  • 50ml EVO

Directions

  1. 1. Process onion chilli and garlic
  2. 2. Cook onion paste until soft in olive oil until soft then add tomato paste, spices further 1minute then cool
  3. 3. Mix lamb, parsley, breadcrumbs, lemon zest, mustard and 2 teaspoons sea salt. Add onion mixture
  4. 4. Griller to high
  5. 5. Salad mix everything
  6. 6. Place bread on baking tray, brush with evo, spread one quarter of lamb mixture over each pita then grill until golden brown approx 10 minutes
  7. 7. Season to taste, add dollop of yoghurt and serve salad alongside
