ORANGE GINGER GLAZED TURKEY by: Sheila Lukins

Ingredients

  • ORANGE GINGER TURKEY GLAZE:
  • Grated zest of 1 orangey
  • 1 1⁄2 cups orange juice
  • 1/4 cup honey
  • 3 tablespoons soy sauce
  • 2 tablespoons bitter orange marmalade
  • 2 tablespoons minced fresh ginger
  • 1 tablespoon finely minced garlic
  • TURKEY:
  • 1 large orange, halved
  • 1 fresh turkey (about 18 pounds), with giblets and neck
  • Paprika, to taste
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 10 to 12 cups Blue Ribbon Stuffing (click to see recipe)
  • 4 to 6 tablespoons unsalted butter, at room temperature
  • GIBLET BROTH:
  • Giblets and neck from turkey, washed
  • 2 cans (14 ounces each) chicken broth
  • 2 cups water
  • 2 celery ribs, with leaves
  • 2 onions (unpeeled), halved
  • 6 parsley sprigs
  • GIBLET GRAVY:
  • About 2 cups pan juices
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1/2 cup Orange Ginger Glaze
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • Giblet and neck meat
  • Giblet Broth, if needed
  • GARNISHES:
  • 2 large bunches seedless grapes
  • 2 to 3 large bunches fresh sage
