Palak "Paneer" With Pressed Fresh Ricotta

  • 1 pound Homemade Fresh Ricotta or store-bought fresh ricotta, drained
  • 2 tablespoons ghee
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, chopped
  • 1 tablespoon finely chopped peeled fresh ginger
  • 1 medium-size fresh serrano chile, stemmed and chopped
  • 1 teaspoon garam masala
  • ¼ teaspoon cayenne pepper
  • 1 pound baby spinach, roughly chopped
  • 1 cup firmly packed fresh cilantro leaves and stems (about 2 oz.), plus additional cilantro leaves for garnish
  • ½ cup water
  • ¼ cup heavy cream or plain yogurt
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon kasoori methi (dried fenugreek leaves), optional
  • Basmati rice or flatbread, for serving
