Be sure to pat your scallops dry, season them on both sides with salt and pepper, add about a tablespoon of olive oil to your nonstick pan (preheat your pan to medium high heat), add scallops, cook on the first side for about two minutes or until brown, and then turn them only cooking about one minute on the other side. Remove from pan immediately as scallops will overcook easily.
Salad dressing: take the juice from half of the lemon add a little salt and pepper and about 2 tablespoons of olive oil and whisk. This dressing also tastes good with the scallops!
