Pasta Piselli

Ingredients

  • Olive oil
  • 1 medium onion, chopped
  • 4 rashes of bacon, chopped
  • 1½ cups of peas (not sure if that is the right quantity!)
  • 2 tablespoons of wine
  • Salt & pepper to taste
  • 400g of pasta (use pasta of your choice)

Directions

  1. · Heat oil and cook onion until soft (use a little more oil than you normally would because you need it to coat the pasta)
  2. · Add bacon and cook until bacon is crisp
  3. · Cook frozen peas in boiling water until just done and then drain and add to the onion and bacon
  4. · Add wine and salt and pepper to taste cook for a further five minutes then set pan aside and leave the lid on so the juices don’t evaporate
  5. · Cook the pasta until al dente, reserve ¼ cup of pasta water and then drain pasta
  6. · Add pasta to the onion, bacon and peas, add pasta water, mix and serve
  7. Serves 4
