QUAIL
Heat oven to 350
Heat some oil in a frying pan on medium high
Salt and pepper the quail on both sides
Put quail breast side down and cook till browned (about 2-3 minutes). Turn over and cook for 1 minute
Place in oven and cook for 15 minutes
Allow to cool then cut up pieces. You can use the wings if you want or discard
Reserve the legs to put on top at the end
SAUCE
Sauté shallots and pepper flakes in olive oil for about 2 minutes over medium heat in large pan
Add garlic and thyme and cook 30 seconds
Add optional ingredients and sauté till just tender
Add wine and reduce till liquid is almost gone
Add stock and 1 Tbsp butter and reduce till it starts to thicken. Stirring often
add salt and pepper to taste
Remove from heat and whisk in butter a little at a time
Add parmigiana and stir till incorporated
Put back on LOW heat and add quail. Stir well to warm
Add pasta and mix till well coated. Add some pasta water and mix till pasta is coated and nice and creamy
Serve with chopped parsley and more parmigiana
