Here is the pav recipe that I followed:

  2. Ingredients
  3. 3 1/2 cups all I purpose flour
  4. 1 cup warm milk
  5. 2 tbsp. milk powder
  6. 1/2 cup warm water (might use less)
  7. 1 egg (can skip for veg )
  8. 1 tbsp. sugar
  9. 4 tbsp. oil
  10. 4 tbsp. melted butter
  11. 1 1/2 tsp instant yeast
  12. 1/2 tsp. salt
  13. 1 egg for egg wash before baking(or milk for veg )
  14. Instructions
  15. Sieve the flour, then add milk powder, sugar, yeast and salt. Then add the oil and butter and the egg, and mix together. Now add all the warmed milk. Start kneading together and gradually add the warm water a little at a time. You might not need it all, so add it sparingly until your dough is nice and soft. Knead for a good 8-10 minutes. The more you knead it the softer the buns will be.
  16. Touch a bit of oil with your fingertips and apply all over the ball of dough. Cover in a bowl and set aside for 40mins to an hour for it to double in size.
  17. Punch it down, and break off bits of dough and shape each of them into a ball. You should get about 10-12 small rolls.
  18. Grease your pan/pans with butter and dust with some flour. Place the rolls in it and try to get them close to each other so that there are no or very little spaces in between.
  19. Cover the pans and set aside for a second rise, about half an hour to rise.
  20. Now apply egg wash on the buns, preheat your oven to 200 deg C and bake for about 20-25 minutes, or until the bread is nice and golden on top.
  21. Remove tray from oven.
  22. Remove buns from tray and place breads in a cloth .
  23. Cover them in cloth so they turn out soft.
