Take the chicken out the packet and dice it up into chunks.
Spoon out a couple of big dollops of peanut butter into a bowl and pour in half a tin of coconut milk. Then using a fork mix it all up until the peanut butter has pretty much mixed into the milk.
Take around two mugs worth of brown rice and give it a good wash under the tap. At the same time, fill a sauce pan with 2/3 inches of water and bring to the boil. Then, once boiling, put the rice in and leave to simmer until done as per the instructions on the packet.
Next, take the chicken and place it all into a big sauce pan on a high heat and stir around until a little brown on the outside. Once browned, pour in the coconut milk and peanut butter mix and leave to simmer for ten mins.
When the 10 mins is up, take your bag of mixed vegetables and put it into the chicken and peanut butter/coconut milk mix and leave to simmer again for 10 mins.
Once the rice and chicken is done, pour it all onto a plate and enjoy.
