Penne: Chicken Breast Parmesan-Crusted in Creamy Sauce

Ingredients

  • 4 boneless chicken breasts
  • 2 tbsp olive oil
  • 12 oz penne pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • Salt and pepper (to taste)
  • Fresh basil for garnish

Directions

  1. Cook the penne pasta according to package instructions, then drain and set aside.
  2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat, then cook chicken for 6-7 minutes on each side until golden and cooked through.
  3. Remove chicken from the pan and set aside. In the same pan, sauté minced garlic for 1 minute until fragrant.
  4. Add heavy cream and Parmesan cheese, stirring to combine. Simmer for 2-3 minutes until the sauce thickens.
  5. Toss the cooked pasta into the creamy sauce, then slice the chicken and place on top of the pasta.
  6. Garnish with fresh basil and serve.
