Pepper Cheese Log

Ingredients

  • 250g packaged cream cheese
  • 50g butter (2 heaped Tbs)
  • 2T Parmesan cheese
  • 2T tomato sauce
  • 2 gherkins, finely chopped
  • 2T red capsicum, finely chopped
  • 4 shallots or spring onions or 1/2 small onion, red or white, chopped finely
  • Cracked black pepper to cover logs

Directions

  1. Beat cream cheese and butter until smooth. Add the other ingredients and mix well.
  2. Divide into 3 equal portions and form into neat logs. Wrap in grease proof paper, twist the ends to keep the shape, and refrigerate.
  3. When firm, roll in pepper.
  4. Can be frozen.
