Pepper Cheese Log
Ingredients
- 250g packaged cream cheese
- 50g butter (2 heaped Tbs)
- 2T Parmesan cheese
- 2T tomato sauce
- 2 gherkins, finely chopped
- 2T red capsicum, finely chopped
- 4 shallots or spring onions or 1/2 small onion, red or white, chopped finely
- Cracked black pepper to cover logs
Directions
Beat cream cheese and butter until smooth. Add the other ingredients and mix well.
Divide into 3 equal portions and form into neat logs. Wrap in grease proof paper, twist the ends to keep the shape, and refrigerate.
When firm, roll in pepper.
Can be frozen.
