  • 4g olive oil spray (2 sprays)
  • 42g bread, 1 slice toasted
  • 1Low-fat latte, made at home
  • 150g fresh fruit

Directions

  1. In a small bowl, whisk eggs and pesto.
  2. Spray oil in a non-stick frying pan and heat over medium heat. Pour in egg mixture and stir until eggs are cooked through.
  3. Top warm toast with pesto scrambled eggs.
  4. Follow with a takeaway latte and a piece of fruit, or save for a mid morning snack.
