PH Aged White Cheddar Cheese Sauce

Ingredients

  • 1 C Butter
  • 1 C AP Flour
  • 1 Gal Whole Milk
  • 4lbs Aged White Cheddar, shredded
  • 35ea White American, sliced
  • 5 tsp Salt

Directions

  1. Melt butter in a sauce pot, whisk in flour and cook 1-2 minutes, until it is a bubbling smooth paste.
  2. Slowly add milk, whisking to avoid lumps. Bring to a simmer, stirring constantly until thickened.
  3. Lower heat to the lowest it can go and whisk in cheese a little at a time until fully melted.
  4. Whisk in salt and taste. Adjust seasoning if needed.
  5. Cool completely. Strain through fine mesh.
  6. Store in appropriate container. Cover, label and date.
