PH Apricot Mostarda

Ingredients

  • 1/4 Cup Shallots, minced
  • 1/4 C Canola Oil
  • 2 C Rice Wine Vinegar
  • 4 C Dried Apricots, diced
  • 1/2 C Mustard Seeds
  • 3 Tbsp Ground Mustard
  • 3/4 C Brown Sugar
  • 3/4 C White Sugar
  • 1/4 C Water

Directions

  1. 1. Sauté shallots in oil until soft, deglaze with vinegar, add sugar and stir to dissolve.
  2. 2. Add remaining ingredients and bring to a soft boil. Reduce heat and simmer for 20-30 minutes or until apricots are plump, soft and mixture is thickened.
  3. 3. Taste and adjust seasoning if needed.
  4. 4. Cool completely. Store in appropriate container.
  5. 5. Cover, label and date.
