In a large bowl mix 2 1/2 cups flour, 1 tsp salt in a bowl and stir in 2 tbsp oil. Add yeast mixture and stir all together with a fork.
Knead it into a ball adding a scant amount of flour if it is too sticky. Cover bowl with a tea towel and let rise 10 min. Roll out dough or stretch it to fit pizza pan. Add toppings. Bake at 425 for 16-20 min.
As I mentioned I froze half of this dough to use later. It was sticky when I took it out of the bag so I sprinkled it with a small amount of flour as I was stretching it I to my lightly greased pan.
