• With the electric mixer: beat eggs, add sugar and continue to mix until smooth.
• Add cooled butter, flavourings, and continue mixing.
• Sift in flour and baking powder, folding in by hand. Keep an eye on the flour to get a nice workable mixture.
• Heat iron until it indicates it is ready.
• Place mixture on each cooking plate using two teaspoons, one for the mixture the other, which I leave in warm water, to guide the dough on to the plates.
• Try to centre the mixture.
• Cook for 20 to 30 seconds only.
• Place individually on a metal rack for a minute or so before stacking.
