Plantain Cakes

Ingredients

  • 3 hard, yellow Plantains
  • 1 tsp. salt
  • 2 tsp. pepper
  • 2 Tbsp. butter or margarine
  • 1 tsp. baking powder
  • Oil for frying

Directions

  1. Peel plantains and cook in water until tender, about 30 minutes.
  2. Chop plantains coarsely, pound in mortar and mash until smooth or process in a food processor. Cool.
  3. Add salt, pepper, butter and baking powder. Mix well. Shape into cakes about 1" in diameter.
  4. Heat oil to 365 degrees. Deep fry plantain cakes until light brown. Drain on paper towels.
  5. Serve hot with fish or meat.
