Poached Salmon With Coleslaw

Ingredients

  • DAY 4 DINNER:
  • 4 salmon pieces
  • Coleslaw mix
  • 2 sliced spring onions
  • 1 tbsp rice vinegar
  • 1 1/2 tsp olive oil
  • Herbs and Spices of your choice
  • Seasoning as desired
  • 3/4 cup of 100% whole grain (quinoa)
  • SNACK:
  • Orange on the side

Directions

  1. Serve poached salmon with a slaw made by tossing coleslaw mix and 2 sliced spring onions with rice vinegar and olive oil. Add spices, herbs and seasoning as desired. Pair with 3/4 cup whole grain quinoa.
  2. Serve with segments on the side.
